Mount St. Professor

Very fitting that The Professor's last day in the Wolf Den was making his own Volcano. He loves anything scientific and had a great time. I will miss having him in my Wolf Den, but I am very excited to see him grow as he works on new skills now that he's a bear.

I'm Back!

Yeah, I'm not sick anymore... Junior is letting me get a nice chunk of sleep and I'm feeling that glimmer of energy starting to return! Over the past year I've racked-up quite the "To Do" list and I'm finally getting started... one being, learn to use my dehydrator. So, for my first time out - I dried strawberries for my cereal and made my own strawberry fruit leather. And just to prove I was feeling that much better I threw in some bananas for my second batch!

Can We Eat This?

Can you really eat one of these?

Our family orders our fruits and veggies through a coop called Bountiful Baskets. Every other week we go pick up our basket and never know quite what to expect and it's been very good for us. Most things I know how to cook - but when we found three artichokes in the basket I must admit... I've never even eaten one... let alone, cooked one!

Thank goodness for the Internet - a few recipe searches and one instructional video later I gave it a go and it turned out pretty well. Everyone, including Bubba, gave it a try... and EVERYONE agreed they thought it was pretty good.

By the way it was a pretty good deal... we pay $15 for our entire basket and while I was in the store I happened to see artichokes on sale for Easter and noticed they were 2 for $4. They were just a small part of our large basket of fresh produce and in the store I would have spent $6 just for them. Boy am I glad I get a BOUNTIFUL basket!

We are thankful for our Savior and the gifts he has very lovingly given. We are thankful to know that family relationships can last forever and that our little angel has truly been a blessing to our family.

*Stats Update: Junior recently had his two month check-up - looked great! He is now 24 inches tall and weighs 10lbs. 13oz. He also had his first round of shots... hated it... every time he looked at me the rest of the day he cried.
